As you say, Pure Data could probably work. And, yes, it is also free. Compared to Max/Msp, however, it is harder to use. You might try to download the free 1-month demo version of Max/Msp first and see how you like it.
I use a presonus firebox, because it helps me get my guitar signal in and out of the computer. But, any audio/digital interface should work. Once your guitar signal is in the computer, you can change it any way you want! Then, the signal comes back out of the computer and you can send it to your amp or any other effects. Here is a great tutorial for how to do this. I think they use a mixer in their setup, but the same logic applies.

So, look into getting a device that will bring your guitar audio signal in and out of a computer. Then, download the free max/msp 1-month trial. Go through some of the tutorials listed in the link I pasted above. If you're not totally confused and exhausted by then, you can try to add in the Wiimote.

Once your wiimote is working in Max/Msp, you should see all sorts of values change as you move the remote and play with the buttons. You can then make these values change guitar effects that you've written in Max/Msp. Its a little like using the wii mote to adjust all the knobs on an effects pedal. But, all of this is happening through the computer.
I apologize for not writing a more precise tutorial on this subject. Before I do, I want to test my system on Pure Data or some other program that can be accessed for free. I may even write my own software. I'll put you on the Vivian Darkbloom mailing list, so you can be kept up to date about new Wii Guitar stuff. I hope that everyone will soon be playing guitars that can be controlled by gesture. Its a really fun and exciting way to modify the sound of the guitar!!
